貴州有一道菜,徐霞客吃了贊不絕口,連魯迅吃了也胃口大開(kāi),稱它為“素食佳品”。


Did you know there's a dish from Guizhou that left both Xu Xiake and Lu Xun raving? It's so delicious that Xu Xiake couldn’t stop praising it, and Lu Xun called it a “vegetarian delicacy.”

 

這道菜就是獨(dú)山鹽酸菜。今天我們來(lái)到黔南州獨(dú)山縣,一起來(lái)品嘗它,了解它背后的故事。


The dish is called “Dushan Pickled Greens”. Today, we’re in Dushan County, Qiannan Prefecture, to taste this iconic dish and uncover the story behind it.  

 

關(guān)于獨(dú)山鹽酸菜,有一個(gè)美麗的傳說(shuō),在盛產(chǎn)青菜的獨(dú)山,有一位公主日思夜想如何能讓人一年四季都吃上青菜,終于在夢(mèng)中從仙人那里學(xué)到了貯藏青菜的辦法——洗凈晾干,放入陶缽,加入鹽、米酒、辣椒腌制,于是就按照這個(gè)方法制作,就成了鹽酸菜。


Legend has it that a long time ago, in the greens-rich lands of Dushan, a princess dreamed of preserving fresh vegetables for people to enjoy year-round. In her dream, a celestial being taught her the secret: wash and dry the greens, store them in clay pots, and add salt, rice wine, and chili to ferment. The princess followed this method, creating what we now know as “Dushan Pickled Greens.”  

 

慢慢的,這道酸辣咸甜、開(kāi)胃可口的鹽酸菜開(kāi)始傳入尋常百姓家,大家吃了感覺(jué)精神百倍,十分開(kāi)胃。


Its tangy, spicy, and slightly sweet flavor soon became a favorite among locals, boosting their appetite and spirits.  

 

傳說(shuō)歸傳說(shuō),獨(dú)山鹽酸菜確實(shí)得到了很多名人的贊賞。1638年,徐霞客游歷貴州時(shí)在獨(dú)山停留,在當(dāng)?shù)厝思页粤他}酸菜后,對(duì)其贊不絕口。


The story doesn’t end there. In 1638, Xu Xiake, the famous explorer, visited Dushan and was so impressed by the dish that he couldn’t stop praising it.

 

1924年,感冒多日的魯迅,在吃了朋友帶來(lái)的獨(dú)山鹽酸菜后,食欲得以恢復(fù),精神也倍增,離開(kāi)時(shí)還帶走了一壇。


Centuries later, in 1924, Lu Xun, recovering from a lingering cold, regained his appetite and energy after eating “Dushan Pickled Greens” gifted by a friend. After that, he even took a jar home with him!  

 

酸酸的、脆脆的,特別爽口。吃一口鹽酸菜,吃的不僅是美味,還是歷史。
